Chinese Almond Cookies

Ingredients

  • 1/2 cup whole almonds
  • 1 cup sifted flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup butter or margarine
  • 1/3 cup sugar
  • 1/2 tsp. almond extract
  • 1 Tbs. gin vodka, or water
  • Sanding sugar or sprinkles

Instructions

  • Finely chop or grind almonds.
  • Thoroughly cream butter and sugar.
  • Stir flour with baking powder and salt and add to creamed mixture.
  • Stir in remaining ingredients.
  • Form dough into small balls on a greased or parchment lined cookie sheet.
  • Press with a back of a large spoon to flatten each ball
  • Sprinkle with white or colored sanding sugar or sprinkles.
  • Bake at 350 for 15 minutes or until very lightly golden.
